Take 2 Chicken breasts, cut them into strips and put them into a ziploc with enough italian dressing (can use low-fat) to wet it, leave overnight.
Chop onion, green bell pepper, and red bell pepper into thin stips.
Coat pan with cooking spray, cook chicken over medium heat for about 7 minutes. Remove chicken, but keep warm. Add more cooking spray, plus your onions, cook about 5 minutes, add bell peppers for about 7- 10 more minutes then put chicken back in for a few more minutes so everything is nice and hot.
Heat tortillas in microwave, add chicken, vegetable mixture, salsa, (sour cream, opt.)
Excellent meal, makes about 2 servings. :D
