Found this at recipe-zaar, and it's really good!
3 lbs chicken pieces or whole chicken
1 package Italian salad dressing mix
4 tablespoons butter
1 small onion, chopped
1 clove garlic, chopped
1 can cream of chicken soup
8 ounces cream cheese
1/2 cup chicken broth
Place chicken in crock pot, sprinkle with Italian salad dressing mix and 2 tablespoons melted butter. Cook on low for 6 hours.
Melt 2 tablespoons butter in sauce pan and saute garlic and onion. Add the cream of chicken soup, cream cheese, and chicken broth. Stir until smooth. Add this mixture to the crock pot and cook on low for an additional 1.5 to 2 hours.
If you're going to be away all day, just dump all the ingredients in at the beginning (even without sauteeing) and cook for 8 hours.
Low carb version: omit cream of chicken soup. Use 1 cup chicken broth and one chicken boullion cube.
Serves 4-6. Haven't met anyone yet who doesn't love this recipe!
