Does anybody have any good dutch oven recipes they want to share? I really enjoy cooking in my dutch oven during camping season! Anything from breakfast to dessert!

2cans fruit(peaches,cherries,apples)can use one can fruit and one can of pie filling
1can sweetened condensed milk
1box white cake mix

First start fire early to have plenty of hot coals. A oven set at 350 will do in a pinch.
Then line a 4-qt, dutch oven with aluminum foil. If your doing this on hot coals the dutch oven must have feet and a lip around the top to hold the coals.
Mix fruit with 1/2 cup of the cake mix and choice of seasoning, put in the dutch oven. mix the remaining ingredientspour ovef fruit and cake mixture.
Put cover on top and place on bed of hot coals and place a heaping shovel ful of coals on top of the oven. cook for 45 mins. or an hour check after 40 minutes.
variations mixtures of fruits ore good try cherry/pineapple,peaches/apricots,dark cherries/peaches. Anything that suits your fancy.:p

one loaf frozen bread dough
2 c grated mozzarella cheese
pepperoni
cooking oil
1 jar pizza sauce
1/2 medium onion
1/2 chopped green pepper

Let bread thaw a partially rise. Oil dutch oven, bottom and sides press risen dough to cover entire bottom, pour and spread sauceevenly over dough,leaving edges clear.Sprinkle on cheese and top with remaining ingredients. Place covered oven over coals and cover lid with coals needed for med/ hot (approx.400 deg)
Bake for 30-40 minutes, checking every 10 minutes.:D

serves 12
3 lbs hamburger
1 large onion chopped
4cans potatoes
2 cans carrots
water(optional)
1/2 pkg stew mix
brown hamburger and drain. Add onion and cook until soft. Open cans and dump contents undrained into the pot. If you like things thin add a can or two of water. Add stew mix and stir well.
Heat until hot

6-8 tart cooking apples-pared and sliced
1C sugar
1Tbsp. cinnamon
1/8tsp. salt
1Tbsp. grated lemon peel
1Tbsp. lemon juice
3Tbsp. butter
pastry 9" pie one crust

Mix sugar, cinnamon,salt, and lemon peel togrther and sprinkle over apples. Then mix butter and lemon juice and pour over top of dry ingredients. Place in dutch oven and bake at 400 deg. for 35-40 minutes. remove from heat and roll pastry crust over the apple mixture. Bake for 10 more minutes at 400 deg.

Lemon topping for apple pan dowdy
1/2 C sugar 1Tpsp. corn starch
1/8 tsp. salt 1-1/2 C water
briong to a boil in saucepan. then simmer 5 minutes. Add:
3Tbsp. butter 2Tbsp lemon juice
1Tbsp. grated lemon peel 1/2 tsp. nutmeg

CHEESE ENCHILADAS-1st Place Winner
INGREDIENTS
4 c. Monterey Jack, shredded
2 c. Cheddar, shredded
2 medium onions, chopped
1 c. sour cream or plain yogurt
1 c. chopped green bell pepper
3-15 oz. cans tomato sauce
4 T. chopped fresh parsley
1/2 t. dried oregano
18 flour tortillas
3 T. chili powder
3/4 t. ground cumin
1/2 t. pepper
2 cloves garlic, finely chopped

PREPARATION
Grease dutch. Mix Monterey Jack, one cup Cheddar cheese, 1/2 onion (chopped), sour cream, parsley and pepper. Spoon about 1/3-1/2 cup mixture onto each tortilla around filling and face seam side down. Mix remaining ingredients except cheese. Pour over enchiladas. Sprinkle with remaining cheese. Bake until hot and bubbly. Serve about 18.

COOKING TIME: Approximately 30 minutes

Scratch Country Gravy

Plese give credit when distributing or passing on this recipe as it is from my cook book. Thank You all for this politeness and consideration.

3 pounds bacon ends and pieces, diced
3 pounds bulk pork sausage
2 medium yellow onions, diced
1/4 cup minced garlic
1 Tablespoon Kosher salt
2 Tablespoons fresh ground black pepper
2 teaspoons ground red pepper
2 pounds unsalted butter
2 1/2 to 3 cups all purpose flour
2 1/2 to 3 gallons whole milk

Preheat and oil a 15" Maca Dutch oven with a solid layer of coals across the whole bottom. Brown the bacon pieces in the Dutch oven then add the sausage and brown. Add the onions, garlic, salt, and black and red peppers. cook together for 5 minutes. Add butter and melt. When butter is melted start adding the flour to make a rou 1/2 cup at a time. you need 2 1/2 cups for a thinner gravy and 3 cups of flour for a thicker gravy. Cook the flour for 8 to 10 minutes to cook out the raw flour flavor.

Slowly add milk to the mixture to thicken the gravy consistantly stirring while adding the milk. Bring the whole pot to a boil and lightly boil (just above a simmer) for 10 to 15 minutes to completely thicken. Serve
Makes 3 to 4 gallons gravy

Swiss Steak


2 lb. boneless venison sirloin steak, 1" thick, cut into serving size pieces
2 T. dry onion soup mix
1/2 t. freshly ground pepper
1/4 to 1/2 t. crushed red pepper flakes
1 green pepper, sliced into rings and seeded
1 c. sliced fresh mushrooms
1 can (14 1/2 oz.) diced tomatoes, drained reserve liquid
1 T. steak sauce
1 T. cornstarch

Heat oven to 350* degrees F. Line 12 x 18 inch baking pan with 12 x 28 inch piece of heavy duty foil. Arrange meat in single layer in dish. Sprinkle meat evenly with soup mix, ground pepper and pepper flakes. Top evenly with green pepper and mushrooms.

Spoon on tomatoes over meat. In small bowl, combine reserved tomato liquid and the steak sauce. Stir in cornstarch until smooth. Pour mixture evenly over meat. Fold and crimp foil over meat to enclose. Bake for 1 1/4 to 1 1/2 hours, or until meat is very tender.

( You can cook this in your dutch with the tomatoes, just make sure to seal the foil good)

Easy Peach Cobbler

What you'll need:
12" Dutch Oven, camp style (three legs, rim around the top)
two cans sliced peaches (12 or 14 oz cans, with syrup)
one box of cake mix (white or yellow, any brand)
one stick of butter
24 hot charcoal briquettes (not the Matchlight type)

How to assemble it:
Grease the inside of the oven with 1/4 of the stick of butter
Dump both cans of peaches into the oven
Pour the cake mix on top, spreading as much as possible as you shake it
Dot the top with the rest of the butter stick

How to cook it:
10 coals underneath, 14 coals on top
Every 15 minutes, rotate the lid 1/4 turn
Every 15 minutes, rotate the pot 1/4 turn the other direction.
Should be done in 30-45 minutes. It's done when the crust is gold and bubbly.

How to serve it:
It's EXTREMELY hot. Let it cool, with the top off, for about 15 - 30 minutes. Serve warm, with either a glass of cold milk, or a cup of hot coffee.

Monkey Bread

Ingredients

2 c. water (real warm)
1/2 c. sugar
1 T. salt
1 T. yeast
6 c. flour
1/4 c. oil
2 large eggs (beaten)
1/4 lb. butter
Mix 2 cups real warm water, ½ cup sugar, 1 tablespoon salt, and 1 tablespoon yeast. Let set until bubbly. Add 2 large beaten eggs and 3 cups flour, stir-do not beat. Add ¼ cup oil and 3 cups more flour. Dough will be sticky; cover and let raise until double in bulk.

Roll dough out on a floured surface to ½ inch thickness. Cut into 2 ½ inch circles.







Melt 1/4 pound of butter in a deep 14" Dutch oven. Do not let butter get too hot. Dip circles of dough in butter, coating both sides. Lay circles of dough on inside edge of Dutch oven, overlapping approximately one third. Place the second layer of dough circles like shingles inside the first ring.

Cook with 11 briquets on the bottom of each oven and 15-20 briquets placed around the outer rim of each lid. Bake for about 25 minutes. Remove the ovens from the bottom briquets and finish cooking with top heat only for approximately 10-15 minutes more. When finished remove from Dutch oven and serve warm.

Variations

Garlic Parmesan Monkey -- Bread Follow above recipe adding ½ teaspoon garlic power to the melted butter in the Dutch oven. After circles of dough are placed in the Dutch oven sprinkle the top with ¾ cup Parmesan cheese.

Sesame Seed Monkey -- Bread Follow the above recipe adding 1 tablespoon sesame seeds to the melted butter in the Dutch Oven. After circles of dough are placed in the Dutch oven sprinkle the top with 1 tablespoon sesame seeds.

Dutch Oven Biscuits



Ingredients

1/4 cup lard or shortening

1/2 cup warm water

2 cups flour

1/2 cup dry milk powder

2 Tb sugar

1 Tb plus 1 tsp baking powder

1/2 teaspoon salt

Build a charcoal fire with 36 briquets, and let them burn until they are covered with ash. Place 12 of the coals in a circle. Place a 12 inch Dutch oven over the circle of coals. Add the shortening to the Dutch oven and heat until melted. Using pot holders, tilt the Dutch oven to lightly coat the interior with the melted shortening. Pour the melted shortening into the warm water, and combine with the dry ingredients, which have been mixed together well. Stir just to make a soft dough. Drop heaping tablespoons of the dough into the Dutch oven. Place the lid on top and use a spade to place the remaining coals on the lid. Cook the biscuits until lightly browned, 15-20 minutes. Serve hot with wild honey.

Camp Fire Breakfast

Ingredients
1/2 lb bacon (or pre-cooked sausage)
1 medium onion
2 lb. bag of frozen hash brown potatoes (can be defrosted first)
1/2 lb. grated cheddar
1 doz eggs
Small jar of salsa-about 1 cup (optional)
This recipe requires 6-9 bottom coals and 12 -15 top coals.

Pre-heat 12" Dutch Oven. Slice bacon and onion into small pieces and brown until onions are clear. Stir in the hash brown potatoes and cover. Remove cover and stir occasionally to brown and heat potatoes (15-20 minutes).

Scramble the eggs in a separate container and pour the mixture over the hash browns. Cover and cook until eggs start to set. (10 - 15 minutes)

Sprinkle grated cheese over egg mixture, cover and continue heating until eggs are completely set and cheese is melted. Optional: Pour small jar of salsa over cheese/egg mixture. Cover and cook for an additional 3-5 minutes. Slice and serve.

Chicken Pot Pie


Ingredients

2 large chicken breasts, cooked and cubed

2 large cans mixed vegetables

1 can cream of chicken soup

1 can cream of mushroom soup

1 10-pack refrigerated biscuits



Mix chicken, vegetables including liquid, and both cans of soup. Put in a Dutch oven and warm over coals. Do not boil. When warm, place biscuits on top of chicken mixture and cover with lid. Place coals on lid. Check after 15 minutes. Cook until biscuits are done. Usually takes about 30 minutes. Serves four
