Jerky

3lbs. Venison or Lean Beef
1Tbsp. Prague Powder 1 tsp. Onion Powder
1tsp Garlic Powder ¼ c. Soy Sauce
1tsp. Black Pepper
1/4c Worcestershire Sauce
Mix all ingredients and marinate meat about 12 hrs. Place on smoker racks and place in preheated smoker with vents open at about 120 deg. Close vents in about 1 hr. Raise temp. to 160 deg. and add wood chips. Smoke for approx. 4-5 hrs. or until dry. Cool and refrigerate.

Sounds great I have been looking for a good jerky recipe, I have not made it in years and lost my recipe.:D

What is prague seasoning?

prague powder is not a seasoning it is a curing salt. It is available at sausage maker .com or any sausage supply store. Or butcher supply wholesaler. You must use or risk boutulism. I also find it at butcher and packer supply.com or eldons.com
