Jerky
3lbs. Venison or Lean Beef
1Tbsp. Prague Powder 1 tsp. Onion Powder
1tsp Garlic Powder ¼ c. Soy Sauce
1tsp. Black Pepper
1/4c Worcestershire Sauce
Mix all ingredients and marinate meat about 12 hrs. Place on smoker racks and place in preheated smoker with vents open at about 120 deg. Close vents in about 1 hr. Raise temp. to 160 deg. and add wood chips. Smoke for approx. 4-5 hrs. or until dry. Cool and refrigerate.
