Smoky Potato Packets
Ingredients:
1/3 cup olive oil
2 lbs. new potatoes, sliced thinly
2 slices of sweet onion
3/4 tsp. dried rosemary or 1 tsp. fresh rosemary
1/2 tsp. salt
pinch of pepper
aluminum foil
Divide ingredients evenly onto 6 sheets of aluminum foil. Fold foil on both ends and sides to make packets. Cook on the grill or open fire. Remember to check one packet after 20 minutes for doneness and to make sure bottom isn't burning. If necessary, complete cooking with an additional sheet of foil under packets. If grill space is limited, cook these packets first and keep them wrapped. They will stay warm while burgers or other food is cooking.
A similar but different recipe....
Pouch Potatoes Italiano
Ingredients:
1 1/3 lbs potatoes, cut into 1/2 inch cubes (or frozen diced potatoes)
4 smoked turkey sausages, sliced 1/4 inch thick
1 cup fresh broccoli florets
1/3 cup olive oil
sprinkling of italian seasonings
4 sheets (12 inch square) aluminum foil
Heat oven to 450 degrees or preheat grill. In bowl, mix all ingredients; divide evenly among foil sheets. Seal each pouch securely. Place on baking sheet and bake in oven for 35 minutes or place directly on grill. Check periodically to make sure bottom isn't burning.
Black Bean Soup
Ingredients:
1 lb ground beef
1 envelope taco seasoning
2-15 oz cans chicken broth
2-15 oz cans black beans
1 can diced tomatoes
1-15 oz can whole kernel corn, drained
Brown ground beef and combine taco seasoning. Add remaining ingredients. Heat thoroughly. Simmer 5-10 minutes more. Garnish with cheddar cheese or sour cream.

This is a great, easy one for kids.
Pita bread
Jar spaghetti sauce
Shredded mozarella
Pepperonis
You know what to do...make a pita pocket pizza...wrap it in foil.
Stick it in the coals long enough to melt the cheese and voila!

You'll need:
Bannanas
Chocolate bar
Reynolds wrap
knife
Leave the skin on the bannana and slice it long ways like a boat. Now put some little chocolate boat riders in the slit, wrap it in foil and heat on the fire.
Eat it with a spoon.
You might also add:
peanut butter
peanuts
marshmallows

This is a old boyscout recipe thats easy and the kids enjoy.
1 lb hamburger any kind
potatoes sliced about 1/4"
carrots sliced
onions sliced
Make burger into patties place on piece of foil approx. 12"x12". Then put onoions on it. Then potatoes. Then top with carrots. Salt and pepper to taste. Fold foil in a way so they will lot leak. Grill on hot coals approx. 20 minutes per side.

We also cook veggies this way. WE cook potatoes and carrots together. We also will use summer squash or zucchinni. to keep from sticking to foil we add a couple of pats of butter and salt and pepper to taste.:D

1 chicken cut up
1/4 C.laurys seasoning
1 Tbsp. garlic powder
1 tsp.pepper
1/4 C.lemon juice
1 Tbsp. paprika
1 stick butter or margerine
Season chicken with dry ingredients place on hot grill. Place remaining ingredients into small saucepan including left over dry ingredients. If neccessary add more of dry ingredients. while chicken is cooking on grill baste with mixture in saucepan. I don't usually measure dry ingredients and they can be adjusted to taste. Grill until chicken is fully cooked and enjoy. This is probably my favriot way to BBQ chicken and not as messy to eat as when adding sauce

Bacon and Eggs in a Paper Bag (Serves 16)
1 lb. bacon
16 lunch size paper bags
32 large whole eggs
16 long handled cooking forks
Cut each slice of bacon in half. Open lunch bag and line bottom with 2 half-slices of bacon. Wash hands after handling raw bacon. Close the bag by folding the top down 1 1/2 inches. Make a second fold about the same size. Pierce the bag (through the fold) in the center with the cooking fork or a stick. Hold the bag (by the cooking fork or stick) over a bed of hot coals. The bag should be about 1 inch above the coals. Cook for 3-5 minutes until bag starts to get soaked with bacon grease. Remove bag from heat, let cool for 1 minute. Break open 2 eggs and drop them into the bag on top of the bacon. Stir eggs, refold bag and pierce in center with cooking fork. Hold the bag about 1 inch above coals for about 15 minutes or until eggs are firm and bacon is cooked. Eat bacon and eggs right from the bag.

Omelet in a plastic Bag (serves 12)
12 whole eggs
6 oz. shredded cheese
1 medium green pepper
12 Ziploc plastic bags
6 oz. fully cooked ham
1 medium onion
salt and pepper to taste
12 cooking forks
In large kettle (use several kettles for a large group), bring water to a boil over hot coals or campstove. Water needs to be 4-5 inches deep during cooking. Chop ham, onion, and green pepper into small (diced) pieces. Break one egg into each Ziploc bag. Add 1 Tbs. each of cheese, ham, onion, and green pepper (leave out anything you don't like). Zip bag shut. Shake bag for 1 minute or until ingredients are well mixed. Make a handle for each bag by spearing bag, just above the Ziploc, in the center, with a cooking fork or stick. Place the filled plastic bag in the kettle of boiling water. As egg cooks it will begin to thicken. Every couple of minutes, remove the bag from the boiling water and shake. Return bag to boiling water and continue to cook until the egg is firm. Do not let bag touch side of hot kettle - the kettle will melt a hole in the bag. Season the omelet with salt and pepper. Eat your omelet right out of the bag.

Walking Tacos (Serves 6)
1 lb. 90% lean hamburger (no fat to get rid of!)
6 bags 1 3/4 oz. Doritos or Fritos
4 oz. shredded cheese OR 1 bottle squeeze cheese
1 pkg. taco seasoning
Cook hamburger until brown. Add taco seasoning mix and follow directions on package. When hamburger is cooked, cut the corner from the Doritos bag and slice the edge from top to bottom. Smoosh up the chips and add about 1/8 to 1/4 cup of taco meat. Add shredded cheese. Eat up!

Sunshine in a Cloud!
(serves 6-8)
8 oz. tub of Cool Whip
1 sleeve cinnamon graham crackers
1 lb. can peach halves
6-8 sandwich size Ziploc bags
Put 1/2 cup of Cool Whip into a sandwich size Ziploc bag. Add 1 peach half and one graham cracker. Zip the bag closed and squeeze everything together. Open a corner of the bag and slurp the "sunshine in a cloud" right from the bag!

1 teaspoon garlic (chopped)
Butter
Parsley (chopped)
Salt (to taste)
Black Pepper (to taste)
1 Lemon
Aluminum Foil
Serves - 1
Spread out a 12 inch by 12 inch sheet of heavy duty aluminum foil.
Onto the foil, place a trout fillet. Sprinkle on top 1 teaspoon chopped garlic, a few pea sized pieces butter, chopped parsley, salt, and black pepper. Cut up a large lemon into wedges and squeeze the juice from one wedge onto the fish.
Fold the foil into an envelope– like packet. Be sure all the edges are sealed to keep in the steam as it cooks. Place the packet on the grill or onto a bed of hot coals. Cook about 8 minutes, turning every three minutes.
Serve with the remaining lemon wedges.
